Recipe by Carl Newman
Halletsville,Texas
-
Ingredients;
-
Whole fryer chicken
-
Dry seasoning.. your favorite (I use a combination of dry
barbecue , mesquite, poultry and cajun mixed together)
-
One can of beer per chicken.
-
Directions
-
Rub seasoning over chicken inside and out.. rub in very well
don't be bashful with it the more you use the better...
-
Take two strips of aluminum foil and cris cross them
-
Open the can of beer and twist off the tab
-
Set the can in the center of the crosses foil strips...
set the chicken on the can of beer so that the can slides into the body
cavity.. it should look like the picture . below
-
Now wrap each sheet of foil up and seal the chicken tightly
with the foil.. Should be wrapped in two layers of
foil and then set in a shallow pan... it should look like this picture
when ready to go into oven..
-
Place in preheated oven and cook at 350 for 30 minutes
per pound of chicken.. example; 4 lb chicken cook for 120 minutes or two
hours. should look like this when unwrapped...
Note: you can leave the chicken in longer if you like and it will
only get more tender and moist.. almost impossible to burn.or overcook..
